We can't find any documentation on the percent variables.

We found the new variables in the notification customization section for each user (http://%host%/nagiosxi/account/notifymsgs.php). These variables are enclosed in percent symbols (%). We would like to know what all of these new variables are.

For example here is the default notification email:

Notification Type: %type%
Host: %host%
State: %hoststate%
Address: %hostaddress%
Info: %hostoutput%
Date/Time: %datetime%

Nagios URL: %xiserverurl%
