If you just have one query of * there is no way to graph different queries in each histogram because there is only 1 query.

Ok,
The part I was missing was going to the first graph and selecting only the first query. I also didn't get at first that once queries were defined, the menu changed.
You're right of course and my theory about the problem being me above was correct.
