I'm brand new to Nagios so forgive me if this is a silly question.
I added a few network switches yesterday and today I went into the Core Configuration Manager and changed the host names. Doing this reset all of the performance graphs. Is that normal behavior? Or is there a way to change the host names without losing the historical performance graph?

Yes this is. If you would like to retain performance data you would need to use the "Renaming Tool" under Configure -> CCM -> "Renaming Tool"
